Limeade Recipe ‹ Prickly Pear Limeade

A refreshing limeade with a unique twist. Prickly pears are now being considered as another 'superfood' with many health benefits. They can be found in various colors--red, green, yellow, and orange. One great way to enjoy this fruit is in this minty limeade. Serve cold and over ice.

Prickly Pear Limeade

Ingredients

  • 12 prickly pears
  • 2 cups water
  • ¼ cup freshly squeezed lime juice
  • 1 ½ tablespoons stevia sweetener (such as Truvia®)
  • 4 fresh mint leaves, or more to taste
  • ice cubes

Cooking Directions

  1. Cut prickly pears in half lengthwise and scoop out flesh with a spoon. Process in a blender until smooth. Push pulp through a fine mesh strainer to extract about 1 1/2 cups juice. Discard pulp.
  2. Place prickly pear juice, water, lime juice, stevia, and mint in a blender. Blend until smooth. Pour into two 16-ounce glasses filled with ice.
Handle pears with a kitchen towel when cutting in half and scooping out flesh. Pears are covered with tiny thorns that are hard to see; Use the sweetener of your choice.
